Description
Angelo Sosa has dedicated his life to coffee. Today, he runs Finca Altocielo in the mountains of Garzón, Huila, a farm that is still accessible only on foot or by horseback. Over the years, he has transformed his family's small farm into a benchmark for quality, working closely with neighboring producers while continuously experimenting with new Arabica varieties. Among them is Papayo, a rare cultivar named after the shape of its cherries and prized for its rich tropical fruit character. Grown at over 1,700 meters above sea level, this lot is processed using the natural method, still uncommon in Huila. The cherries undergo 48–60 hours of fermentation in sealed tanks before being slowly dried for around two weeks on guadua bamboo drying beds, protected with plastic covers and shade nets to ensure an even drying process.
