Description
Papayo is a rare Arabica variety grown mainly in the Huila region of Colombia. Named after the shape of its cherries, which resemble papayas, it is prized for its vibrant tropical fruit character and complex flavor profile.
This lot was produced using an innovative co-fermentation process. The coffee cherries ferment in sealed tanks with selected yeast cultures and a blend of pineapple, orange, passion fruit, and rose essence. After washing, the coffee is dried at low temperatures to preserve its aromatic complexity and natural sweetness.
