Description
Ombligon is a rare Arabica variety grown in Colombia. Its name, which means "belly button" in Spanish, comes from the distinctive shape of its coffee cherries. Still relatively unknown, it is prized for its exceptional quality potential and rich aromatic profile.
This lot was produced using an innovative co-fermentation process. The coffee cherries ferment in sealed tanks with selected yeast cultures and a blend of pineapple, orange, passion fruit, and strawberry. After washing, the coffee is mechanically dried at low temperatures to preserve its aromatic complexity and distinctive sensory characteristics.
